Asian Salad Mango Wraps

Raw. Vegan. Gluten Free. Grain Free.

Ingredients:  Mango Wrap

2 ripe mangos
⅓ cup water
2 tablespoons lime juice
1 teaspoon salt
⅓ cup ground golden flax
½ c coriander, roughly chopped
2 tablespoons black sesame seeds

Method: Mango Wrap

  1. Blend first 5 ingredients until smooth.
  2. Add coriander and pulse to combine and break down a bit. Use an offset spatula to spread the mix between 2 non-stick sheets, (should be about ¼ inch thick).
  3. Sprinkle with black sesame seeds and dehydrate 8 hours at 115° F.
  4. Flip onto mesh and continue for additional 2 hours or until dry, but still pliable.

Ingredients: Asian Salad

½ head Chinese leaf cabbage, cut lengthwise and shredded
½ red and ½ yellow pepper, julienned
1 carrot, peeled into thin strips using a peeler
15 mange tout (snow peas), julienned
½ cup bean sprouts
10-15 mint leaves, torn
3 or ¼ cup spring onion, sliced thin
½ cup or 2 oranges, segmented
1 avocado, sliced

Method: Asian Salad

  1. Mix all ingredients in a bowl and set aside, ready for the dressing.

Ingredients: Dressing

8 soft medjool dates
2 tablespoons lime juice
2 tablespoons tamari
2 tablespoons extra virgin olive oil
1 inch fresh ginger, microplaned
1 clove garlic, microplaned
Add water to blend

Method: Dressing

  1. Layer salad ingredients with desired amount of dressing in the middle of a mango wrapper and roll.
