Raw Salted Caramel Sauce 

Raw Salted Caramel Sauce. Ahh. When I hear this my mouth starts watering, always. But hey, we are not talking about traditional caramel sauce here (refined sugar, butter, heavy cream) – this one is a whole lot different. First of all, it’s dairy free, refined sugar free, contains no artificial colourings, flavours and all the other weird ingredients. I always try to search for healthy alternatives, discover, try, fail and try again. Doesn’t happen overnight, but fortunately, it does happen (as it did with this raw salted caramel sauce). Anyways, I’m not gonna lie, but as much as I enjoy eating avocados – I do also enjoy something sweet. Like really sweet. So, I hope this raw salted caramel recipe will help those who have the same sweet tooth as I do! P.S. anything sweet (even if it’s healthy sweet) should still be eaten mindfully and in moderation. Just so you know. I know you know.

Gluten free. Dairy free. Refined sugar free. Vegan. Raw

Ingredients:

10 Medjool dates, pitted (around 200g)
10 cashew nuts
6 tablespoons unsweetened almond milk
2 teaspoons fresh lemon juice
Vanilla caviar from 1 vanilla bean (OR ½ to 1 teaspoon vanilla extract)
½ teaspoon sea salt

Method:

Start by pitting your dates and don’t worry if you couldn’t find medjool dates, because you can also use normal dates, just make sure you have around 200g of them. If you are using normal dates, you will then need to soak them in hot water for at least 5 minutes so that you have soft and gooey dates to work with (it also helps with the texture). Put them into blender or food processor together with nuts, almond milk, lemon juice, sea salt, vanilla caviar and start blending. Blend until smooth and creamy. Enjoy!

Serve with: dip raw apple slices; drizzle over banana ice-cream or any other fruit, nuts, seeds or why not eat a spoonful alone?
