Sweet Pea Guacamole

This delicious guacamole recipe is simple, quick and incredibly flavoursome. It’s an effortless affair and makes for the perfect Mexican summer side dish when served with tortilla chips. The baby peas add a subtle sweetness to the recipe that compliments the creaminess of the avocado. The secret to an unforgettable guacamole is to use the freshest ingredients possible. Make sure your avocados are ripe and use the Hass variety if possible.

Raw. Vegan. Refined Sugar Free. Gluten-free. 

Serves 4

Ingredients

1 jalapeño chilli, finely chopped
1/2 cup chopped coriander
1/2 cup thawed frozen baby peas (sweet peas if you can find them)
3 medium avocados— peeled, pitted and chopped
Sea salt
1 lime, juiced
Gluten Free Tortilla chips, for serving

Method

In a medium sized bowl combine the chilli with the coriander. Add the peas and avocados and mash with a fork until combined but still a little chunky. Season with salt, a squeeze of lime and serve with chips. The perfect whip together dish for surprise guests and festive entertaining.
